What’s the story behind the name? A brasero is a traditional feature of Argentine grills. In short, it’s a special fire basket where wood or charcoal burns until the embers are ready to heat the food. This allows the pitmasters greater control over the temperature, ensuring that each cut of meat cooks to juicy perfection.

And when it’s time to make a plate, they reach for a glass of Malbec. This delicious example hails from Argentina’s San Juan region, which lies just north of Mendoza at the foothills of the Andes Mountains. The warm, arid climate helps grapes develop seriously intense, concentrated flavors—especially during an “extraordinary” vintage like 2021 (Decanter).
