Flavor Profile
Cabalié is the wine to drink after a long day of empire building. Or maybe just a long day at the office. A sumptuous, fruit-forward red from southern French star Hervé Sabardeil (shown below), it's made in the image of the red wines that allegedly bolstered Roman soldiers over 2,000 years ago.
Speaking of ancient, the village where Hervé’s Grenache vines grow, Maury, is home to some of the country’s oldest vines. These low-yielding plants produce seriously concentrated grapes, which translates to major flavor impact in your glass.
A blend of Grenache, Syrah and Carignan, Cabalié offers generous layers of chocolate and intense, sun-drenched berries. It’s a ripe red that’s great on its own and especially delicious with barbecue or any similarly rich fare featuring a dark or fruit-based sauce.
