El CabRhone is a full-bodied red wine with dark chocolate, cherry, toasted cedar, exotic spice and black tea aromas. The palate offers ripe black currant, plum and baking spice flavors. Bold tannins, bright acidity and a long, velvety finish.

Beyond the label

If there’s one thing you should know about Edgar Torres, the talented winemaker behind El CabRhone, it’s that he’s a real “stickler” for quality. Or, as his team would jokingly call him, a “cabron” (a more colorful Spanish term). But Edgar simply refuses to compromise his vision when it comes to winemaking—and you reap the rewards in your glass.

For El CabRhone, Edgar blatantly eschews winemaking traditions to craft a totally unique red blend. He’s mixed Cabernet Sauvignon and Cabernet Franc, two great grapes of France’s Bordeaux region, with Petite Sirah and Syrah, a star in the southern Rhône Valley. (That’s the second meaning behind the name CabRhone.)

In France, they’d never blend a wine like this. But Edgar works his magic in California’s sunny Paso Robles region, where they happily break the so-called rules to make seriously delicious wines. And Edgar’s used to being a trailblazer. After falling in love with wine while waiting tables, he started out as a self-proclaimed “cellar rat” before becoming Paso Robles’ first Mexican American winemaker and founding his bodega in 2007.

Edgar sourced the grapes for El CabRhone from two of his favorite sites, Frog Town Vineyard and Paper Street Vineyard. In the cellar, he aged the wine for 18 months in French and Hungarian oak barrels. The resulting wine overflows with ripe dark fruit and complex spice flavors, and will pair well with everything from beef empanadas to hearty game meats.
