Flavor Profile
If you’re a fan of Cabernet Sauvignon, you are not going to want to miss HJ Fabre Cabernet Sauvignon Reserva, a barrel-aged beauty from Hervé Fabre (the 2018 IWC Red Winemaker of the Year, below).
Master of Wine Tim Atkin rated a previous release 91 points and raved, “Originally from Bordeaux, Hervé Fabre knows a thing or two about Cabernet Sauvignon...a classic interpretation of the variety, with subtle, leafy aromas, fine tannins, some bright cherry and cassis fruit, a hint of oak spice, and good underlying texture.” And the just-launched 2021 Reserva is every bit as impressive.
The Bordeaux born-and-bred Hervé is very strict about quality—and it’s obviously paying off for those lucky enough to get their hands on his wines. His grapes, from 30-plus-year-old vines, are picked by hand and manually sorted to make sure the best fruit is selected. Then, the wine is aged in fine French barrels for 12 months to give the perfect balance of fruit and fragrant oak character.
While Mendoza has a reputation for particularly fine Malbec, Hervé has Bordeaux in his blood, and his Cabernet Sauvignon is just as exceptional as his award-winning Malbec.
