After decades of building his reputation at top boutiques like Saintsbury and Chalk Hill, Bill Knuttel struck out on his own with glorious results. He makes many of our best-selling California wines, so we’re thrilled to introduce his ‘Saber Selection’ Sauvignon Blanc.
Showing all the elegance and finesse of an expert fencer, it hails from the great 2021 vintage, which produced high-quality, but painfully few, grapes. Luckily, though, Bill has contacts across California and was able to source fruit from three highly respected vineyards—Woods Vineyard (planted by legendary Clos du Bois co-founder Frank Woods) in Dry Creek Valley, Peter Ziblatt’s vineyard in Sonoma Valley and the Robledo family’s in Lake County.
Back at his winery, Bill fermented the wine at low temperatures to retain its trademark elegance. You’re in for vibrant peach, pear and tropical fruit aromas, with a restrained grassy note. The palate adds ripe grapefruit and lime zest flavors and has juicy acidity and a long, fresh finish.
This fine Sauvignon Blanc will make a refreshing aperitif or a delicious partner for seafood, soft cheeses and more. But, like all Bill’s wines, it’s sure to sell fast, so secure your share soon.
