Case in point: this gorgeous discovery from talented winemaker Nicole McPheeters and the under-the-radar Comté Tolosan region.

Comté Tolosan lies in southwest France and is part of the Aquitaine Basin, the plains that fall between the Pyrenees, the Massif Central and the Atlantic Ocean. With a long, warm growing season and rocky, well-draining soils, it’s an ideal spot for cultivating vines. The region is also home to a wide array of rare local grapes—like Négrette, the variety behind Violette de Mireval.

Though also used to craft varietal red wines or red wine blends, Négrette makes stunning rosé. This classic example offers a pretty, pale-pink color, vibrant flavors of citrus and exotic fruits plus trademark notes of spice and violet (hence the name). Enjoy Violette de Mireval on its own or serve with Mediterranean salads, fresh seafood or Asian-inspired dishes.
